Ship Down - Weltanschauung
The Ship down explains the need for a sense of urgency and accountability for all areas of the restaurant.
Imagine your management team sitting in a ship in the ocean. Water is gushing through a hole in the bottom of the ship. All but one of the managers sigh with relief, knowing that the hole is not on their side of the ship. They discuss the correct method for fixing the ship. All the while, the ship is sinking. The same thing can happen in your restaurant.
For example, you notice customer waiting at the table without being acknowledged. “Plug the hole!” Walk over to the Guests, acknowledge them, and take their order. Then, find out why the server was away from the station, why no one else took the initiative, and reset the standards so the situation is not repeated.
Remember you are responsible for every part of the restaurant. If you see a problem, and you say to yourself, “That’s not my responsibility,” you are not part of the solution. You are part of the problem. Ships do not sink one-sixth at a time!
